Whether you are looking for a quick vegan snack to feed your kids or a tasty dish to serve some vegan friends, there are many kinds of plant-based foods that you can have handy in your cupboard to pull together a quick, nutritious meal. If you have the right ingredients within reach, it is possible to prepare a range of delights from hearty vegan dishes to light snacks without too much trouble. Here are some suggestions to meet the needs of your taste buds as well as your waist line. 

Looking  for some easy vegan snacks? How about some of the following:

  • Eggplant dip or olive spread served on crackers

  • Nachos (add some Daiya or Follow Your Heart cheese alternatives from the fridge)

  • Guacamole dip with chipotle salsa

  • Peanut butter and jelly sandwiches

  • Protein powder for smoothies

  • Popcorn sprinkled with a bit of olive oil and nutritional yeast flakes

  • Egg replacer for baked goods such as cakes, cookies, pancakes, etc.

If you want to serve something for mealtime, consider these:

  • Pasta primavera with white beans

  • Hearty tomato soup with quinoa (quinoa is an excellent source of  protein that cooks quickly)

  • Black bean stew with fire roasted tomatoes

  • Tofu and vegetable stir fry over brown rice

  • Pizza with artichokes and olives (with cheese alternative)

  • Curried garbanzo beans and vegetables

There are many mouth watering vegan dishes that can be pulled together with just a few ingredients from your cupboard. With a spark of creativity, a few spices and some good company, it is easy to eat in a conscious and healthy manner that leaves you feeling good.
